Abstract

Chicago, Illinois, was perfectly situated as the gateway between the eastern and western regions of the United States at the turn of the century. In the years after the Civil War, entrepreneurs in Chicago began capitalizing on the expansion of railroads and new technologies like refrigeration. This new meat industry imported cattle and hogs from the West, slaughtered the animals, processed and packaged them into useable products, and snally shipped those goods to burgeoning urban populations in the East.
